Er wird f\u00fcr mindestens sechs Monate in gro\u00dfen Eichenf\u00e4ssern und f\u00fcr weitere drei Monate in der Flasche verfeinert. Er passt hervorragend zu typischen Gerichten aus Bergamo, ersten G\u00e4ngen, Polenta, Fleisch, Aufschnitt und K\u00e4se.  <\/p>\n<p>Valcalepio D.O.C. ROSSO RISERVA. Er ist die Weiterentwicklung des Valcalepio Rosso und wird aus Jahrg\u00e4ngen hergestellt, die ein Produkt hervorgebracht haben, das sich gut f\u00fcr eine dreij\u00e4hrige Reifung in Eichenf\u00e4ssern eignet, gefolgt von einem weiteren Jahr der Verfeinerung in der Flasche. Vollmundig und doch ausgewogen, passt er gut zu reifem K\u00e4se, Fleischgerichten, Braten und Wild.  <\/p>\n<p>Valcalepio D.O.C. MOSCATO PASSITO. Er wird aus der autochthonen, aromatischen roten Rebsorte Moscato di Scanzo auf Grundst\u00fccken au\u00dferhalb der Gemeinde Scanzorosciate hergestellt.<br \/>\nDie im Weinberg sorgf\u00e4ltig ausgew\u00e4hlten Trauben werden mindestens drei Wochen lang getrocknet. Danach folgt die Rotweinbereitung mit Hautmazeration. Die langsame G\u00e4rung wird unterbrochen, wenn der Alkoholgehalt 15 Grad erreicht. Valcalepio D.O.C. Moscato Passito kann ab Mai des zweiten Jahres nach der Ernte vermarktet werden.   <\/p>\n<p>Er hat ein intensives und anhaltendes Aroma und einen m\u00e4\u00dfig s\u00fc\u00dfen Geschmack.
